Ok,so I confess I have not given you the results of Challenge 1 yet. In my usual style of procrastinating, the blog item is three quarters finished. I promise to look up the last few prices before the end of this week.
Audrey has agreed to provide us with a recipe for January so please check in later in the month to see what it is. I'm planning to cook this on Sunday 20th and will no doubt inflict my culinary skills on some colleagues! Hope you'll join me.

ReplyDeleteChilli Bean Casserole. It's many years since I made it but I did enjoy it so would be good for me to test on my family :-)
So the recipe is for uncooked kidney beans (8oz) but I would always suggest tinned if you can as otherwise soaking and boiling involved.
this serves 4 so you may want to halve the ingredients
1 Large tin of kidney beans
an onion finely chopped
garlic - few cloves crushed
8oz mixed veg, whatever you can get/fancy. Suggest carrots/peppers/sweet potato
1/2teaspoon ground cumin
1/2 teaspoon chilli powder
1 large tin of tomatoes (or you can use fresh)
2 tablespoons tomato puree
3 tablespoons red wine
2oz bulgar wheat - can you get that. It acts as a sort of thickner so if you cannot then maybe use green lentils or extra veg
1-1.5 pints of water

It also says juice of 0.5 lemon but cannot imagine I ever used that
Fry the onion in oil.Add crushed garlic
add mixed veg and spices. Stir and cook for 5 minutes to seal in the goodness!Add tomatoes and tomato puree, red wine (this would be optional but helps for your iron )add bulgar wheat and 1 pint of water simmer for 30 minutes. Add seasoning and lemon if required. Add more liquid if you like it like that. It then says cook for another 20-30 minutes but would think 10 is enough to ensure vegetables cooked as beans already cooked
Serve with rice or pittas or garlic bread. However you like chilli really
This would of course include Doritos or such like if i was serving! maybe with some guacomole
